Job Description

Management and supervision of the various departments by means of direct communication with employees and/or via the department manager concerned
Supervising the correct preparation of food for guests and employees in compliance with the agreements made with the F&B Manager
Supervising and overseeing service in the restaurant, bar, lounge and sundeck
Co-ordination of personnel planning and work schedules
Supervising the total inventory of the ship, in co-operation with the Captain
Monitoring whether the ship’s inventory is well-maintained and cleaned. Immediately reporting any defects to the Captain and/or Technical Services
Ensuring order, tidiness and hygiene in the entire hotel department
Carrying out daily duties personally, if circumstances require this
Ensuring personnel maintain correct contact with guests and one other
Solving internal (personnel) as well as external (guests) problems
Requirements
Motivating, assessing, coaching and evaluating employees twice per season in compliance with company guidelines
Nominating employees for potential education and/or promotion
Attempting to solve mutual differences
Communicating well with and supervising the various heads of department. Provision of clear information and straightforward guidelines with work instructions
Taking responsibility for the processing, input and control of all administrative records using a cashbook (income, expenses, preparation of guest invoices, master account, travel file, gratuities, etc)
Controlling the recorded stock of various drinks, food and non-food items in addition to controlling the Head Chef’s new order lists in consultation
Controlling the quantity as well as quality of goods received against order lists and delivery notes
Taking responsibility for sales-activities; in particular the kiosk and the sale of excursions
Maintaining control of the arrangement of excursions, correct number of guides, busses, information folders and city maps etc.
